Cherries and Cream Popsicles

I love making popsicles in the warm summer months and we have finally approached that weather! Here is my new favorite recipe! Feel free to substitute different ingredients and switch up the fruits. Cherries are one of my favorites to put in this recipe but strawberries, pineapples, and blueberries are great too! I used a super cute mold that I love because you don't have to run the popsicle under water to pop out, they just come right out when you pull 'em because of the silicone material! I will link you up to the one I used and some other super cute ones down below!
What you'll need:
-popsicle mold or paper cups and popsicle sticks
-blender or food processor
-about 1 cup seedless or pitted cherries fresh or frozen
-1/4 cup yogurt (thicker yogurt or Greek yogurt)
-2-3 tablespoons cream or milk
-1/2 teaspoon vanilla extract (optional)
-1 teaspoon sugar (stevia, light honey, or other sweeteners work too)
*If you don't have a popsicle mold, pouring your mixture into a Dixie cup, covering it with plastic wrap, and sticking a popsicle stick into it works fantastic! Then, when the popsicles are ready all you do is rip off the paper cup!
Take out your food processor and blend up your cherries until they become a smooth consistency. You could also leave bits of cherries in the puree if you'd like. Side note; If you're blender/food processor is not very strong you may want to defrost the fruit so it's easier to blend. And make sure to use sweet cherries, so we can enjoy the natural sweetness in the popsicle! Set aside your fruit puree and add your yogurt, cream, vanilla extract, and sugar into a small bowl. I like to use cream for a richer, creamier flavor but any kind of milk is fine, even a dairy free milk or yogurt will work! Whisk everything together making sure that the sugar dissolves. If you're milk or yogurt is already sweet, you can lower the sugar to a 1/2 teaspoon. The sugar just helps the popsicle stay creamy, not icy, when frozen. Once the sugar is well combined, spoon the cream layer into the bottom of the mold. Fill it about halfway. Then, spoon in your cherry puree. It's ok if they blend together a little, but spooning the mixture in helps keep them more separated. Freeze for 8 hours or overnight and enjoy!
